Today I made yam and egg sauce. For my egg sauce for yam I use more tomatoes and onions than I do in the egg sauce I used in my sandwich cos I like it more moist. Here's the recipe
INGREDIENTS
1) Yam
2) Tomatoes
3) Pepper
4) Onions
5) Eggs
6) Spices-curry, seasoning cube(i used royco)
7) Salt
PROCEDURE
Peel and boil yam in water(the water level should be same as yam level in the pot)
Add salt and cook till soft checking intermittently with a fork for the desired softness.
For the egg sauce; it's basically same process as the egg sauce for my sandwich-
Heat oil in pan , then add in diced onions, pepper and tomatoes.
Cook for like 3-4minutes(i dont cook for long because I like the sauce to still retain some degree of freshness)
Add in spices and salt to taste.
Cook for another 4minutes.
Pour in the whisked egg distributing evenly in sauce pan.
Flip to the other side after 2minutes and cook for an additional 2minutes.
Voila! Your food is ready.
