Rice and vegetable sauce with plantain and chicken Ingredients

1)Rice
2)Chicken
3)Carrots
4)green beans
5)Green pepper
6)red pepper
7)Spice
8)Plantain
9)Cucumber
10)Ginger and garlic
11)Onions
12)Spring onions

PROCESS
Blend the pepper,ginger and garlic and pour into a ziploc or polythene bag, add spices and salt. Then pour in the chicken. Seal and shake to distribute spices well around chicken. Store in fridge to marinate well over night. Per-boil, rinse and cook rice with salt . Chop the carrots,green beans,green pepper,Onions,Spring onions,red pepper and cucumber. I used soft chicken so I just added a cup of water after steaming the spiced meat for 5minutes in medium heat. After I added water I cooked for 15more minutes and removed the chicken from the broth. Then heated my pan with a little bit of oil,and fried my chicken till slightly brown on both sides. After I removed, I peeled, salted and fried my plantain. Then i set the oil quantity in my pan to desired quantity. Added my shredded veggies with exception to the cucumber and stirred. I cooked for 5minutes and spiced the sauce. Cooked for another 10minutes, then I added a little of the chicken broth. You have an option of thickening the sauce. If you choose to, mix the corn flour in the broth before adding into the sauce then I put the fried chicken pieces into the sauce . Cooked for an extra 2minutes and removed from heat. Bon apetit!
