Hungry jack buttermilk pancake and waffle mix

I saw hungry jack buttermilk pancake and waffle mix at the store the other day and decided to try it.
 I'm making this post because after I tried it, I liked it a lot. The fact it wasn't too sweet allowing room for extra sugar if you prefer and it was so fluffy.
 All is had to do was add water, whisk and allow to rise.
 I melted margarine and used to make mine. It had a good rise and fluffiness.
Will definitely be making more if this.

FRIED RICE AND MACARONI WITH FISH

For this post, I decided to combine macaroni into my fried rice
For this method, I introduced the macaroni into the rice after allowing the rice  to steam for 12 minutes, I then rinsed out  the water and used meat stock with a lot of blended crayfish to cook through. Of course also with salt and seasoning.
 I then lightly sauted my vegees,onions and pepper and seasoned then in batches I combined with the rice.
 I served with sliced cucumber and seasoned fried mackerel. Yummy!!

SPICY DRY GOAT MEAT AND DRY FISH STEW

For Sunday dinner I decided to make this stew. It was a tad bit spicy because I have kids who would not eat any food spicy beyond comfort.
 I pounded the tomatoes,ginger,garlic ,pepper and onions as opposed to blending and used a little vegetable oil to fry, when it was dry I added my spices and cooked goat meat,cleaned dry fish and I spiced with knor chicken,salt and curry. That was it. The flavor from
the goat meat, ginger and garlic gave it a wonderful flavor and it was a great addition to the white rice we had.

jellof rice with dodo fritata


So I saw the recipe  for dodo fritata on matse cooks and just had to try it. It was so yummy. But I did my own combination, serving it with jellof rice cooked with dried fish and beef and ponmo.
All plates were empty at the end of the day. y'all need to try this. Separately or together. You won't regret it.

catfish stew with white rice

For dinner the other night I decided to make this. The initial plan was to use assorted beef but I was so busy I couldn't go get it early and so I settled for catfish instead and I'm glad I did.
 I used garlic,ginger,green pepper,yrllow pepper and onions blended together to give it flavor and I added it 3 minutes before removing the stew from heat to utilize the flavor maximally.

RICE+BEANS+PLANTAIN+VEGETABLE STIRFRY+BEAF

So for dinner yesterday I decided to go assorted with a mixture of different varieties. No recipe for this because it's something we've all tried separately. So just be innovative and mix different recipes, if it works,awesome! If it doesn't well, you'll know better not to mix some meals next time. Lol. So here's a pic.
 Fridays are usually my time to make a special dinner. Don't ask me why cos I don't know why. But it feels like a day to prepare something special. Maybe it's cos it's a celebration into the weekend.

SHAWARMA!!

‎For the bread, dissolve yeast (2 teaspoons) in water and allow to properly dissolve well for 10 min in water
 Mix flour and a half a teaspoon of salt i‎n a bowl. Mix in the yeast water and knead to form a dough.
Allow to sit covered in a damp cloth for 30 minutes.
Mix mayonnaise ans ketchup together and set aside.
After 30 minutes, knead the dough once more and roll out the dough in flat‎
‎ Small sizes(pita bread sizes).
For the filling;
The chicken used for this should be sliced and well marinated in garlic,onions, pepper, seasoning cubes,salt,curry,blended green and yellow pepper. The aroma from this is..... #sighs ;divine‎!!
‎Dice (not too small) the vegetables(cabbage,onions,red pepper, green pepper,lettuce) 
 ‎Fry your  chicken golden brown. 
Spread the mayonnaise mix over the bread,intermittently spread the ‎vegees and chicken in between  (place the hot dog between) , roll the bread over the spread and grill,bake or hot pan.
 Enjoy!!!‎

I did and I must admit y plate was clean at the end.
It's interesting when u just don't have one type of food in the plate. Variety makes it interesting. The important thing to remember is portion control.

Cold oat meal breakfast.

Just combine prepared oat meal,coconut milk, flax seed, Chai seed, and honey in a mason jar. Refrigerate overnight and you have yourself a tasty breakfast.

macaroni mixed with avocado pesto!

Ingredients 

Spinach
Basil
Lemon juice
Nuts(hazel,peanuts,cashew nuts, any yo‎u have) 
Garlic
Salt 
Pepper 
  Blend together and toss it with your cooked macaroni, chopped spinach, olive oil,salt, sliced tomatoes and some basil.‎

I avocado
Black pepper(a pinch)
Drizzle of olive oil
1/2 lime juice
 Chopped sweet chilli
Mixed leaf salad.
 Mix and serve with garlic bread.

Today Sunday June 28th was mid year thanks giving at my church #christembassy LCC6. Agidingbi lagos! I decided to make a 16 pieces fish skirt infused with another 16 pieces of ankara(african fabric) in orange shades.
 I wore it with a white lace cape blouse. Here are a few of the pictures unprofessionally taken. Lol.

A new introduction

RAISING KIDS 2

 Another very important lesson I've learnt as a parent is "never make it a habit to limit your English words when speaking to kids" because they're smarter and catch on faster than you think.

 Example; you're having a conversation with your kid about someone being "dizzy" You can use it in the sentence and then explain what it means (they will always ask you for explanation of a new word once they hear it).

 If you ask lily my 4 year old the meaning of dizzy she will tell you it means you're turning around because she knows it's a term you also use after turning around.

You will find that if you use it once or twice they will catch on where to use the word and then you won't have to keep explaining that word every time you're suppose to use it. Remember that these kids are smarter than we give them credit for.

MAMA PUT STEW

Ingredients 
1)fresh tomatoes ,onions. and pepper blended. (The quantity of pepper should be according to how spicy you want it. I think even if u don't like pepper you should still make it a Lil spicy though ‎)
2)‎canned tomatoes paste. I used gino
3)knor chicken cubes
4)‎boiled eggs
5)fried fish 
6)‎assorted beef-stomach,kidney,liver etc (spices and cooked till tender)
7)‎ponmo cooked with the beef
8)turkey (spiced, cooked and fried)‎
9)sliced onions
10)vegetable oil
11)curry,thyme,‎ etc

12)blended crayfish 
METHOD 
Boil and dry the blended tomatoes. ‎
Heat oil in pan and pour in the fresh tomatoes paste and fry‎, then add the onions. Fry for 10 minutes. 
Add the canned tomatoes paste and stir. 

While still stirring, cook for 5 minutes. 
Add the fried turkey,the assorted beef, ponmo, and cook for 3minutes stirring in the process to prevent burning . ‎
Add the meat stock and then the spices,crayfish and salt and stir‎.
When u remove from heat u can add in the boiled eggs and fish and gently stir in so it doesn't scatter into the stew.
Serve with anything - from rice,yam,beans etc ‎

DAMBU

Ingredients:
1cup coarsely crushed wheat
2cups fresh moringa leaves
1 diced onion
2 chopped peppers
1cup crushed raw groundnut

Directions: Add 1cup water to wheat,keep aside till it soaks up water. Add all the other ingredients,season with salt. 
Steam(mixture up,water below) for 30mins. 
Serve with oil,yaji & golden brown fried onion
Note- recipe for Yaji coming soon. Yaji is this spice the suya makers use on the grilled meat that is flavor packed!

mixed vegetable soup

Ingredients:
2 large carrots, chopped
3 med potatoes, peeled & chopped
1 1/2 cups stock
2 tblsp tomato/pepper paste
3 sausages, chopped
1 eggplant, chopped
1 cupful chopped cauliflower
1 avocado, peeled and cut into cubes
Seasonings

Directions: 
parboil cauliflower in salt water for a few mins. Keep aside

Cook potato and carrots in stock with tomato/pepper paste and seasoning till tender. Pour in a blender and pulse till smooth.

Put back on low heat, add the eggplant, cauliflower and sausages. Season with spices and simmer for a few mins.

Garnish with avocado 

Serve with whole wheat bread

ASSORTED PEPPERSOUP

Ingredients
1)ginger
2)garlic
3)bay leaves
4) blended fresh pepper
5)meat assortment (liver,kidney,heart , stomach(shaki)
6)salt
7)knor chicken
8)curry powder
9) few curry leaves
10)thyme
11) 2 tablespoon of vegetable oil
12) 5 strands of dried pepper
13)blended onions


 

Process

Spice meat with knor seasoning cube , salt, garlic, ginger ,curry and thyme some of the pepper paste and onion paste and steam then add 3cups of water and cook till tender; but not tender enough for consumption. Then add the remaining ingredients. Stir and cook till really tender.
You could dice up your meat to tiny cubes. I think that way is better. I didn't here though but when I was eating I wish I had.
Remove from heat and serve.

TOFU,AWARA,STEAMED VEGETABLE SALAD

Tofu
Incase you don't know where to get tofu, you can make at home. I got a detailed recipe for that from @bilkisuwa


 Soak soya beans for 2hrs then blend with water. Bring the milk to boil then add vinegar to make it curdle. Sieve using cheese cloth ( our local cloth for sieving pap). Tie the cloth tightly and place a heavy object on it to remove the remaining water and make it solid. Cut into desired shape n size

To make the salad, just Use a  mixture of EVOO, dry mint, black pepper, vinegar and knorr seasoning as dressing with combined steamed vegees and tofu.

WHOLE WHEAT BUN SANDWICH


> Ingredients:
> 2 Whole wheat buns, 1/2 can of tuna, cucumber slices, tomato slices, 1 cup cooked peas, 1 cup cooked chickpeas, 1tbsp olive oil, white pepper,
salt, onions

>
> Recipe:
> 1. Put the peas, chickpeas, olive oil n pinch of white pepper and salt in a food processor and mix until it forms a smooth paste/spread.
> 2. Drain the tuna and fry with onions, season with little salt and white pepper.
> 3. Cut the whole wheat buns into 2 and apply the pea/ chickpea spread on top and bottom halves.
> 4. Place the cucumbers and tomatoes in layers on the bottom half then the tuna.
> 5. Place the top half of the bun and toast.

okra soup with wheat

OKRA SOUP

1 cup grated okra 
2 tblspns crayfish 
1 1/2 cup meat stock, 
potash (kanwa-hausa, kanwu-Igbo, akanwu-Yoruba). 
Place meat stock on heat and bring to boil. 
Add crayfish, cook for 2mins then add the okra, potash and whisk to ensure okra doesn't form lumps. Leave the pot open and cook for 3mins on low heat.
 Serve with stew & wholewheat meal

moringa salad (zogale in hausa)

Ingredients: steamed moringa leaves, g/nut suya spice (kulikuli in hausa), tomatoes and avocado.
Method: mix freshly steamed moringa leaves with the g/nut suya spice, salt to taste & choice seasoning. Garnish with tomatoes and avocado.

SHREDDED BEEF CURRY WITH BASMATI RICE

Shredded beef curry with Basmati rice

Ingredients: 1/2kg shredded beef,2 cloves garlic, 2tblsp veg.oil,carrots,peas,1 chopped onion,1tsp curry,1 cup coconut milk,2tblsp tomato-pepper paste.

Method: stir fry beef with garlic & seasoning in oil until the meat is fried. Add tomato paste & keep frying for 2mins. Pour the coconut milk, curry & bring to boil. Add the carrots and peas, cook till the sauce is reduced. Stir in the onions, simmer for a minute before serving with steamed rice.

FISH PEPPER SOUP



Ingredients:
1kg catfish, cleaned,washed and cut
1 lemon
1 tablespoon vegetable oil
1tablespoon tomato-pepper paste
3 cloves garlic, peeled and chopped
1 fresh ginger, peeled and sliced
1 & 1/2 cup water
2 red chili peppers
1 leek, diced
2 bay leaves
3 seasoning cubes
Parsley, chopped
Salt
,


Method: 
*Marinate fish with lemon, pinch of salt and 1 seasoning cube for 15mins.
*In a non-stick pot, fry the tomato-pepper paste, garlic and fresh ginger in oil for 2mins. Add the water and bay leaves, bring to boil.
* Add the remaining seasoning cubes, leek, red chili peppers and then the fish.
* Lower the heat and allow to simmer for 5mins.
* Dish out and garnish with chopped parsley.

Serves 4

FRUITS IN YOGURT

Fruits in yogurt
>
> Ingredients: 
yogurt (sweetened or unsweetened depending on your choice), a cup each of diced plum, orange, pineapple, pawpaw & watermelon, coconut.

> Method: 
put the fruits together and add the yorghurt. Grate the coconut on top. Serve chilled.
 You also have the option of blending all together and serving chilled!

DANWAKE( a type of hausa dumpling)

 I recently made acquaintance  with a great innovative cook who is into healthy eating and I had to get the recipes on her delicacies because they all look so yum. Her name is Mrs Bilkisuwa. The recipe for this dish is below
Ingredients: 
danwake flour (a mix of beans,wheat flour,cassava flour, baobab & potash), veg. oil & pepper.

Method: 
mix the flour with water till it forms a somewhat thick but soft dough. Drop in boiling water and cook for 15mins. Strain and serve with veg oil,sprinkle of pepper, boiled eggs & cooked veggies

The image is not always what it seems!

 A lot of times we are blinded by what we see and make a lot of assumptions from what we see but the truth is; what we see is only the surface and like an ice berg,that is just 1%. The remaining 9% is immersed in water.
 People like to carry on facades of personas. I've come to learn that.
 Never be blinded by "perfect images" trust me, a lot of it are photo shopped.
 Your marriage,job,home,academics,business or whatever it is that concerns you is fine the way it is. If it's not,that's okay too.
 Have you ever had to say 'I'm  okay'even when your heart is hurting? Then think about it. How many people tell you they're more than fabulous which is just a mask behind their crumbling world.
 Comparison is a thief of joy I must say. Sometimes it's okay to have the trials because it can only make the testimony pronounced and celebrated. After the storm comes the testimony.
  Weeping may last the night but joy comes in the morning. Its a new year people. Let's enjoy the life we've been blessed with while we cook the one we dream about into reality. Have a lovely day. Cheers!
