Fried rice
Fried rice Ingredients
1)Carrots
2)Green beans
3)Green pepper
4)Spring onions
5)Onions
6)cucumber
7)Red pepper
8)Rice
9)Chicken
10)Cooked goat meat(optional. I used it here cos I had left over in the fridge.

Process
Slice veggees and pepper. Spice and cook chicken in minimal water till cooked. Boil rice half ways,rinse off water, and cook with meat stock adding curry,salt,seasoning cube and bay leaves till its cooked. Take note not to add too much water. Mine was below the rice level with give or take an inch and half. Note: don't add pepper,or any spice in red in the rice cos it will change the color. The color we are aiming for is green so doing otherwise will ruin it. Fry chicken. Melt butter and add in sliced veggees, goat meat and fried chicken in exception to the cucumber. Reserve some sliced carrots . Mix reserved carrots with cucumber. Spice the veggees and remove from heat after 3-5minutes bcos we don't want it to soft. Remove chiken and keep seperately.Portion the rice into 2 (depending on the rice quantity though)and then the veggee sauce into the the same proportions as the rice and then mix the one portion of rice with one portion of vegetable sauce over heat, 2minutes each. And then serve by sprinkling the cucumber mixture over the rice,and adding salad cream over that. Then don't forget the chicken and goat meat. Bon apetit!

Okra and ogbonno soup with goat meat.
Ingredients
1)Okra sliced
2)Ogbonno blended manually to achieve smoothness
3)Pepper and onions
4)Goat meat
5)Smoked black fish
6)Ugwu leaf
7)Red oil
PROCESS
Spice meat well with curry,onions,pepper,salt,knor cubes and garlic and cook for 1 and half to 2hours. cook till its soft. use a fork to pierce through to check softness.Add in the onions.the onions has to be added early because if you add in after the ogbono has been added you may lose that slipperiness. Heat oil in another small pot and pour in the blended ogbonno till it melts or mix the ogbonno in the red oil and place bowl over boiling water. Both achieve same results. Pour in melted ogbonno into the meat and mix. Take note to have the meat stock a lttle below the meat level. Add in the pepper and cook for 5minutes. Reduce heat. Then add the black fish, okro and Ugwu and mix. Spice it up again with crayfish,knor chicken cube or whatever seasoning cube u have,salt and a little bit of water and cook for another 5-7minutes. Its ready. Serve with pounded yam, eba or semovita or whatever you have.
Potatoes and plantain with egg sauce
Ingredients
1)Potatoes;peeled and sliced.
2)Plantain;peeled and sliced.
3)Tomatoes,pepper and onions sliced together.
4)Eggs
5)Vegetable oil
PROCESS
This is a very easy meal to prepare. Heat oil and fry the plantain and potatoes till slightly brown. Make the egg sauce like in my yam and egg sauce.

Ingredients
1)Chicken spiced with salt,pepper,curry,garlic,ginger,knor and onions and sealed in a ziploc bag and refridgerated for a day.
2)Rice,
3)Pepper and tomatoes blended roughly.
4)tin tomatoes(for extra redness)
5)Vegetable oil
6)Onions;diced
7)Knor cubes
8)Carrots,green beans,green pepper and spring onions. All diced.
Process-
Fry the chicken directly from the bag in preheated oil till brown. Remove from pan and pour in your tomatoes blend,tin tomatoes and one half of the diced onions. Fry for 10-15minutes. Spice it with your spice and salt. Then add in the fried chicken to cook some more till its well cooked in the sauce.add in meat stock if you have. Its advisable you should reserve some stock anytime u cook meat to add taste to the sauce and cook for about 10minutes more. Remove from heat. Boil rice half way and rinse off the starchy water. Pour in all the sliced veggee and the other half of the onions into the drained rice in the pot and mix in. Remove chicken from sauce and dry in oven or grill. Add the sauce into the rice and mix. If it needs more water add in and cook through. Serve with chicken. Bon apetit
PS- Another method is to not add the veggees in the rice. After mixing with the rice with the sauce, cook. When its almost dried of the moisture add the veggees on top and cook till dried of moisture then mix together. This is for if you don't want the veggees too soft.

INGREDIENTS
1)Beans soaked,and skinned by washing off the skin
2)Vegetable oil
3)Crayfish ;blended
4)Boiled eggs;halfed
5)Smoked fish debonned and skinned or use corned beaf.
6)Onions ;diced
7)Knor cubes
8)Salt
9)Pepper(aligator pepper and the regular round ones)
PROCESS
Grind the soaked and skinned beans with the pepper and some onions till very smooth. Add in the crayfish,diced onionsknor cubes,salt and mix well with a spatula. Add in your oil and mix well again. Add in the desired water quantity to have a little bit of thick consistency. In the tin you are cooking pour portions of the mixture and then put the fish and egg in each tin. Cover the tins, pour water in pot,place them inside cover and cook for 30-40min. And serve .bon petit.

EGUSI (melon seeds)SOUP
Ingredients
1)Bitter leaf(I bought already washed one so I just rinsed and sliced)
2)Egusi (blended manually cos the electric blender doesn't blend it smooth)
3)Red oil
4)Onions
5)Pepper
6)Garlic
7)Salt
8)Crayfish (blended)
9)Beef
10)stock fish
PROCESS
Steam beef and stockfish with sliced onions,knor cubes,salt and curry. Steam till moisture is almost dry. Add in blended pepper with garlic and then water to cook the meat through. When cooked remove from fire and heat oil. Add in the left over pepper and onions blended.fry for 3-4 minutes and add in egusi to fry too for 2minutes stirring all through the 2min. Pour in the beef in its stock.and then the rest of the ingredients;bitteer leaf, crayfish,salt etc. Mix and reduce heat to the lowest to allow it cook well without burning. Cook for 15 - 20minutes and its okay to be served with Eba, semovita,pounded yam etc. Bon apetit

Tomatoes sauce
Tomatoes sauce is all about as much flavours u can get in. You get good flavors from Ginger, garlic, bay leaves etc so I blend in ginger into my tomatoes before boiling to dry out the moisture content.
Tomato sauce ingredients
1)Boiled and dried tomatoes,pepper,ginger and onions.
2)Frozen fish cut ,salted and fried.
3)Soft Chicken steamed and slightly cooked
4)Chicken broth
5)salt
6)Onions diced
7)Blended crayfish9
8)Curry
9)Knor,royco and napa tomaoes seasoning cubes.(A little bit of each)
10)Garlic
11)Vegetable oil(it has no cholesterol)
12)Gino tin tomatoes
13)potash
14) bay leaves
PROCESS
I cooked my chicken with garlic,salt,pepper,onions ,curry and royco seasoning cube. Fry the fish and the chicken. I mixed together my cooked and dried tomatoes,tin tomatoes and diced onions. Heat the desired vegetable oil content in pan that can contain the sauce or pot as you desire. Add in the mixture and cook for 15-20 minutes stirring intermittently so it doesn't start burning from underneath the pot. Add the chicken broth in. And mix. I add in potash to kill some of the sourness from the tin tomaotoes. Then I mix and add in my chicken, curry , salt, crayfish bay leaves and seasoning cubes. Stir and cook for 5minutes. Add in the fried fish last cos its so easy to scatter inside the sauce and I don't want that. After I put it in I stir gently and cook for another 5minutes. And I'm done;the stew is ready to be served with white rice or white spaghetti or whatever you want it on. Bon apetit
