Dried okra soup.

This is a very easy and fast soup to cook and the ingredients make it quite traditional . Its enjoyable also so you will like this very much.

INGREDIENTS

1)Dried Okra blended smooth

2)Fresh pepper

3)potash

4)Dawa dawa

5)Beef

6)Ginger and garlic powder

7)semovita

8)Palm oil.

PROCESS

Spice the meat with thyme, dried ginger,dried garlic, curry,thyme,knor cubes and onions and cook the meat till its tender.
Add in the pounded pepper.
Add in salt and palm oil.
Pound the dawa dawa and add it in
Dissole potash in water and pour into the meat.
Add in the blended dry okra.
Cook for another 2-3minutes
Serve with semovita or whatever interests you.

By the side there was a serving of green garden eggs sliced and spiced with dried pepper, salt, royco and a little potash dissolved in water(to reduce bitterness).

Vegetarian pasta.

INGREDIENTS

1)Honey well spaghetti

2)5carrots(onions)

3)Green beans(sliced)

4)Green pepper(sliced)

5)Red pepper(blended)

6)Onions(sliced)

7)Garlic(minced)

8)Idies easy cook stew mix

PROCESS

  Boil water and add in your spaghetti. I use honey well cos it doesn't stick as much as the other brands in Nigeria. Cook for 5 minutes and drain.
  Heat vegetable oil in pan, pour the idies stew mix in a bowl and add a little bit of water to make it into a paste. Not too thick though. Add it into the oil with the blended pepper.. Stir fry for 3-4 minutes and add in curry, thyme,salt,a teaspoon of sugar,star cubes and then add in a little bit more water if its too dry.
  Add in the garlic and sliced vegetables and reduce the heat. Allow to cook for 4minutes
  Add the spaghetti into the sauce and mix well. Add a little water if its too dry and Still on low heat cover to cook for 5minutes
Serve. Bon apetit!

Tip on safety in cooking beans


During  a Naccima Export Action Group (NEXAG) meeting  recently, the Representative of NAFDAC explained to all present that many times, Beans Merchant apply strong chemicals on Beans to prevent pest infestation.

 When an overdose of the chemical is applied, the beans become toxic and dangerous for human consumption.

 This explains why some people are reported dead after a consumption of beans.

  According to the official, it is advised that beans is first per boiled for some minutes and rinsed off before proper cooking for consumption.

Vegetable mix to reduce sugar level in blood


Today I learnt a good tip on how to lower blood sugar. Any one out there who has a parent,uncle,aunty or relative who has high sugar levels in their blood should share this tip with them.

INGREDIENTS

1)Bitterleaf. Sliced and washed slightly to reduce bitterness a bit.

2)Ugwu(fluted pumpkin) sliced.

3)Scent leaf(rosemary leaves) sliced

4)Fresh pepper. Blended

5)2large onions

6)Crayfish.blended.

7)Dried fish.

8)A pinch of salt and half a cube of knor.

PROCESS

 Start by cooking the dried fish for 10minutes with as minimal water as possible then adding all the ingredients.

 Cook for 3-5minutes and remove.

 Serve a portion in all meals;from rice,beans,yam etc.

Fresh fish peppersoup stew.


I decided to make this stew that had all the goodness of pepper soup wrapped in stew. This stew was practically fish pepper soup . It was so flavor packed and the aroma was #sighs breathtaking!  The Oziza, Ehu and Oda are all igbo names. Don't know any other name for it. Sorry. But if u mention it to the igbo women in the market that sell melon, stockish etc they will give you or direct you where you can get it.

INGREDIENTS

1)Oziza

2)Ehu(break the pod open with your teeth and remove the seed)

3)Oda.

4)Yellow pepper

5)Rosemary(aka scent leave)

6)Fresh ginger

8)Garlic

9)Tomatoes

10)Pepper

11)Plantain

12)Vegetable oil

13) Fresh fish(I used cat fish)

14) Rice

15) Crayfish

16) Salt

17) Onions

18) Royco

PROCESS

 Blend tomatoes and pepper together.

 Heat oil in a wide brimmed pot(I use a wide brimmed pot because of the fresh fish. To allow room for it to settle well into the sauce as well as ease in serving so the fish doesn't scatter)

 Add in the blended tomatoes and fry for 5 minutes.

 Dice the onions and add it in. Fry. For 10 minutes.

 Pound the first 9 ingredients together to form a thick paste. It should be smooth. Add into the sauce.

 Slice the rosemary leave and add into the sauce. Stir fry for 5minutes.

 Add in a cup and half of water, salt and royco cubes. Bring to boil.

 Add in the fish and cover to cook for 10-15minutes.

 Remove from the heat and cover for like 5minutes or more before serving.

 Serve with cooked white rice and fried plantain.

CANNED TOMATOES PASTE SAUCE WITH A VEGEE MIX SERVING.


Today I made this beef stew that composed mainly of canned tomatoes. I still wanted to keep it as fresh as possible so I added fresh pepper and onions.

 I decided to add this vegetable mix . You can still enjoy your tomatoes stew without it or with it .

INGREDIENTS FOR TOMATOES SAUCE

1)De rica tin tomatoes.

2)Onions sliced.

3)Cayenne pepper(long slim pepper) and normal pepper blended.

4)Royco cubes.

5) Curry.

6)Beef cooked till tender then sepeated from its stock.

7)Bay leave.

8)Vegetable oil.

9)Thyme.

INGREDIENTS FOR VEGEE MIX (Optional)

carrots, green beans, green pepper, onions and fresh pepper all diced. Margarine,thyme,sweet corn.

PROCESS

 Heat oil and pour in tomatoes paste, onions and blended pepper mixture. Fry for 15minutes stirring intermittently.

 Pour in meat. And fry for another 4-5minutes.

 Add in your spices-curry, thyme, bayleaves,and salt. Stir and fry for 5minutes.

 Add in the meat stock. And more water if not enough.

 Cover and cook for another 5minutes and its ready.

VEGETABLE MIX

 Melt margarine in pan, stir-fry sliced vegee and spice with salt,curry,knor chicken and thyme.

Cook for 3-5minutes. When you take it off the heat. Add in the sweet corn. Mix and serve with white rice.

STRENGTHENNING BY THE SPIRIT THROUGH FAITH.


I can do all things through christ that strengthens me. this is my month of strengthening as declared by pastor chris.#christ embassy.

 The reason a tripod can hold a projector is cos there is strength within to carry the load. The strength in this month is 'dunamis' which is
 the dynamic power that causes changes. aka 'might'. If i go and take the tripod ,bend it and break it,The strength i've applied is now more than the ordinary strength needed to hold the projector. its called might. that is the strenthening this  month gives us.

 Might is an over powering force.

In this month if there are circumstances that are sturborn or resistant to  every form of method you've applied to get rid of it, apply dunamis aka might.

 You must become conscious of the holy spirit and allow him to infuse you with miracle working ability from inside.

Pray the prayer in EPHESIANS 6:16  May He grant you out of the rich treasury of His glory to be strengthened and reinforced with mighty power in the inner man by the [Holy] Spirit [Himself indwelling your innermost being and personality]. Personalize it by changing the'you' in it to 'I'.

 Hebrews 11: 6  But without faith it is impossible to please and be satisfactory to Him. For whoever would come near to God must [necessarily] believe that God exists and that He is the rewarder of those who earnestly and diligently seek Him [out]. 7  [Prompted] by faith Noah, being forewarned by God concerning events of which as yet there was no visible sign, took heed and diligently and reverently constructed and prepared an ark for the deliverance of his own family.  THE STORY OF THE VALLEY OF THE DRY BONES-
 Ezekiel 37:1 THE HAND of the Lord was upon me, and He brought me out in the Spirit of the Lord and set me down in the midst of the valley; and it was full of bones. 2  And He caused me to pass round about among them, and behold, there were very many [human bones] in the open valley or plain, and behold, they were very dry. 3  And He said to me, Son of man, can these bones live? And I answered, O Lord God, You know! 4  Again He said to me, Prophesy to these bones and say to them, O you dry bones, hear the word of the Lord. 5  Thus says the Lord God to these bones: Behold, I will cause breath and spirit to enter you, and you shall live; 6  And I will lay sinews upon you and bring up flesh upon you and cover you with skin, and I will put breath and spirit in you, and you [dry bones] shall live; and you shall know, understand, and realize that I am the Lord [the Sovereign Ruler, Who calls forth loyalty and obedient service]. 7  So I prophesied as I was commanded; and as I prophesied, there was a [thundering] noise and behold, a shaking and trembling and a rattling, and the bones came together, bone to its bone. 8  And I looked and behold, there were sinews upon [the bones] and flesh came upon them and skin covered them over, but there was no breath or spirit in them. 9  Then said He to me, Prophesy to the breath and spirit, son of man, and say to the breath and spirit, Thus says the Lord God: Come from the four winds, O breath and spirit, and breathe upon these slain that they may live. 10  So I prophesied as He commanded me, and the breath and spirit came into [the bones], and they lived and stood up upon their feet, an exceedingly great host.
 You wil speak/minister to that dead business,dead job, sickness etc and say 'rise up'. It will conform. Remember God can move anything. Remember he moved 20 billion quails to feed the isrealites through the east wind in the desert.

SPICY OKRA CHICKEN SOUP


This recipe is by my friend Joy. This soup was like peppersoup. The aroma from the chicken into the soup gave it a fantastic finish. Its also really easy to make.

Ingredients

1)Chicken.

2)Knor chicken

3)Okra

4)Potash

5)Fresh pepper (pounded)

6)Cook your chicken.

7)Garlic

8)Salt

9)Dried pepper

10)Onions

PROCESS

 Spice your chicken with garlic,knor chicken,onions,salt curry and dried pepper and cook.

 Cut your okra and pound it with small potash. It shouldn't be so much so the soup won't be too thick. Add into the meat.mix

 No oil is needed. The oil from the chicken is enough. Add the pounded pepper and add The salt and knor chicken cubes to taste.

Serve with semovita.

JELLOF RICE AND FISH


This jellof rice is different from my previous post on jellof rice in that I didn't use meat stock or meat in it.
 This is also the first time I've used this fish. Its called kpanla in the mkt. Don't know any other name for it. Its big eyed . I had to get rid of the head.

Ingredients

1)Rice

2)Carrots

3)Green beans

4)Green pepper

5)Gino tomatoes paste

6)Pepper(cayenne and regular pepper)

7)Royco

8)Fish

9)Salt

10)Spices

11)Crayfish

12)Onions(diced)

13)Tomatoes.

PROCESS

 Slice the carrot, green pepper an green beans.

 Pound the cayenne pepper, normal pepper and crayfish together.

 Blend the tomatoes.

 Spice the fish with some fresh pepper,curry, salt,royco and onions. Leave for 1hour to marinate.

 Parboil the rice. And drain. Rinse with clean water and leave to drain in the colander.

 Fry the fish till golden brown and with the left over oil in the pan add in the tomatoes paste,pepper mixture and blended tomatoes

 Fry for 8-10minutes. Add in the onions. Fry for another 5minutes.

 Add in the curry,royco,salt to taste,and chicken seasoning. Stir . Remove a little bit of the sauce before adding water.Add in like 2cups of water. Its always important not to over cook the jellof rice.

 Leave to boil. Then add in the rice. Cook till the moisture is almost dry. Check to see if the rice is cooked. If not add more water.(An alternative method is pouring the sauce into the pot of rice and not the other way round to reduce burning)

 Add in the sliced vegees over the rice . And cover to cook with the last bit of moisture so they don't over cook.

 When the moisture dries out, mix the rice with the reserved sauce and serve.

NUTRI C DRINK WITH A SPIKE OF GINGER ON THE ROCKS.


I learnt this drink from my hubby. I've always hated nutri C but when he was making this drink I was interested in seeing the outcome. When I tasted the outcome I fell in love with this drink. That ginger flavor in it makes it so unique.

  Recently my dear friend Ajoke was educating me on the benefits of garlic on how it boosts our immune and burns calories . Since I can't eat the garlic raw I think this ginger spice mixture has garlic mixed in it. So this is another way to enjoy the benefits.

 Ingredients

1)A satchet of nutri C fruit and veg pack.

2)Ice

3)Mixture of spices consisting mainly of ginger.(Its sold mostly by this mallams that sell garlic,onions etc)

4)Water

Process

Dissolve the spice mixture in a little bit of water. I usually leave for an hour or so for all the particles to melt in .

 I add more water and filter , allow residues to gather under and filter some more till all residues disappear.

 I pour into the jug and pour in my Nutri C. I then stir with a spoon to mix well.

I pour in the ice and add more water .

Serve with ice.

SPICY UNSLICED SPINACH STEW

INGREDIENTS

1)Palm oil

2)Beef

3)Cow ear

4)Spinach(plucked)

5)Onions(sliced)

6)Pepper and tatashe pounded( I wanted it roughly blended)

7)Gino tin tomatoes

8)Knor cubes

9)Crayfish (blended)

10)Salt

PROCESS

  Wash meat and cow ear thoroughly( some years ago I would have been repulsed by seeing cow ear in my food. But this part of the cow is like kpormor and meat combined. Its a good combination) ,spice with ginger,garlic, knor,salt and add water. Cook till tender.
  Wash your spinach to remove all sand and dirt. Drain and leave in colander.
  Heat palm oil in pot. I slightly bleached mine.add the onions, pepper and tomatoes paste together.
  Fry till it begins to slightly stick under the pot
  Add the beef , cow ear and meat stock into the sauce. And spice with knor, salt,curry and crayfish. Leave to cook for 3-5min.
  Add in your spinach. There's another method where I add hot water into the leaves and drain. Then when the sauce is well cooked, I add in the vegetable.
  Cook for another 5min and serve with rice or semovita/eba/pounded yam in which case you don't add tomatoes paste when preparing.

Akara

INGREDIENTS

1) beans (soaked, lightly pounded to shell and washed)
2)pepper
3)onions
4)knor chicken
5)salt
6)vegetable oil

Note: Avoid adding lots of water when blending your Beans. Use as minimal as possible cos the consistency is not required to be too watery.

PROCESS

Blend the beans with some pepper and onions. Dice the left over onions and pepper .

Mix the grinded beans with salt, diced onions and pepper and knor chicken . Mix for like 5minutes.

Put the vegetable oil on heat and scoop the beans paste with a spoon that has a round head or with your hand into the oil. Fry till golden brown.

Serve with custard/pap/oats as desired.

Fresh fish pepper soup.

INGREDIENTS

1)Fresh pepper-roughly blended.

2)Scent leave sliced

3)Onions(sliced tiny)

4)Knor cubes

5)fresh fish

6)A tablespoonful of vegetable oil

7)Peppersoup spice(most market women thet sell stockfish have it. Its a blended mixture of several spices and the aroma is great)

PROCESS

Wash your fresh fish very well with lime till all the slimy liquid have cleared.

Combine all the ingredients with the fish in the ziplock bag. This is to allow the ingredient soak into the fish really well and refrigerate for 2-3 hours or over night preferably

 When you are ready to eat, pour the fish into the pot with 2cups of water and cook. Cook for 20minutes.

 Remove and serve.

Moi moi cooked wrapped in leaves.


Moimoi wrapped in leaves have this unique taste and aroma. I prefer it above all other types( cooked in nylon and tin) . You can't compare.

Here is how I make mine.

INGREDIENTS

1)Beans(soaked ,shelled and blended)

2)Pepper(fresh)blended with the beans or pounded

4)Onions diced tiny

5)Eggs. Boiled

6)Moi moi leaves

7)Liver. Cooked and diced

8)Crayfish(blended)

9)Knor chicken

10)Palm oil or vegetable oil as prefered

PROCESS

 Mix the blended beans with oil,crayfish,onions,knor cubes,palm or vegetable oil, salt and pepper if you didn't blend with the beans thoroughly.

  Add in water to have a certain consistency-not too thick or to watery.

  I've outlined how to wrap it in the leaves in certain stages. Before u seal each wraps, put egg and pieces of the diced liver then seal and place in the pot with some of the leaves at the base.

 When through, add water and cook for 30-40min. And your moimoi is ready.
