Today I made this beef stew that composed mainly of canned tomatoes. I still wanted to keep it as fresh as possible so I added fresh pepper and onions.
I decided to add this vegetable mix . You can still enjoy your tomatoes stew without it or with it .
INGREDIENTS FOR TOMATOES SAUCE
1)De rica tin tomatoes.
2)Onions sliced.
3)Cayenne pepper(long slim pepper) and normal pepper blended.
4)Royco cubes.
5) Curry.
6)Beef cooked till tender then sepeated from its stock.
7)Bay leave.
8)Vegetable oil.
9)Thyme.
INGREDIENTS FOR VEGEE MIX (Optional)
carrots, green beans, green pepper, onions and fresh pepper all diced. Margarine,thyme,sweet corn.
PROCESS
Heat oil and pour in tomatoes paste, onions and blended pepper mixture. Fry for 15minutes stirring intermittently.
Pour in meat. And fry for another 4-5minutes.
Add in your spices-curry, thyme, bayleaves,and salt. Stir and fry for 5minutes.
Add in the meat stock. And more water if not enough.
Cover and cook for another 5minutes and its ready.
VEGETABLE MIX
Melt margarine in pan, stir-fry sliced vegee and spice with salt,curry,knor chicken and thyme.
Cook for 3-5minutes. When you take it off the heat. Add in the sweet corn. Mix and serve with white rice.
