SPICY UNSLICED SPINACH STEW

INGREDIENTS

1)Palm oil

2)Beef

3)Cow ear

4)Spinach(plucked)

5)Onions(sliced)

6)Pepper and tatashe pounded( I wanted it roughly blended)

7)Gino tin tomatoes

8)Knor cubes

9)Crayfish (blended)

10)Salt

PROCESS

  Wash meat and cow ear thoroughly( some years ago I would have been repulsed by seeing cow ear in my food. But this part of the cow is like kpormor and meat combined. Its a good combination) ,spice with ginger,garlic, knor,salt and add water. Cook till tender.
  Wash your spinach to remove all sand and dirt. Drain and leave in colander.
  Heat palm oil in pot. I slightly bleached mine.add the onions, pepper and tomatoes paste together.
  Fry till it begins to slightly stick under the pot
  Add the beef , cow ear and meat stock into the sauce. And spice with knor, salt,curry and crayfish. Leave to cook for 3-5min.
  Add in your spinach. There's another method where I add hot water into the leaves and drain. Then when the sauce is well cooked, I add in the vegetable.
  Cook for another 5min and serve with rice or semovita/eba/pounded yam in which case you don't add tomatoes paste when preparing.
