The song "It Is Well With My Soul" was written by a successful Christian lawyer. He had two girls and a wife and the family planned a summer trip to go overseas. Since he had a lot of work to do, he sent his family and decided to follow them later. He heard the news while on the following ship that another ship had capsized and he knew that his family was there since they mentioned the name of the ship. On His return home, his Law firm was burnt down and the insurance refused to pay, they said "It's An Act Of God". He had no money to pay for his house and no work, he also lost his house. Then while sitting and thinking what's happening to him, being a spiritual person, he wrote a song - whatever my Lord, you have taught me to say - It is well, it is well with my soul. My dear friend, a good attitude will determine your altitude. When you look at your life, career, job or family life, what do you say? Do you praise God? Do you blame the devil? A good attitude towards God makes Him move on your behalf. Just sit down and say, Today God, it is well with my soul, I am thankful I had a peaceful sleep, I am thankful I am alive with possibilities, I am thankful I have a roof over me, I am thankful I have a job, I am thankful that I have Family and Friends. Above all, I am thankful that I have the Lord Jesus Christ on my side. Be blessed and don't be envious or shocked when others are prospering because you don't know what they have been through to get there (test, trials and tribulation) so thank God for what you have. Puff Puff(my first atrempt)
Today I decided to try out making puff puff. Here's the recipe I used. I have this measuring set which I guess was a steal cos I got it at 350 naira and its a complete measuring set. I needed it when I first started learning how to bake cakes cos I learnt from Food network and since their recipes are in measurements, it was just perfect.
INGREDIENTS
1)Flour(2cups)
2)Sugar(1/2 cup though u can reduce or increase it as u please.)
3)Yeast(2teaspoons)
4)Vanilla(yeah! I added it for flavor. You can skip this)
5)Salt(1/4 teaspoon)
6)Water(11/2 cup)
PROCESS
Mix all the dry ingredients together.Add the water and mix wellCover with foil or anything to prevent air from entering. Allow to sit for 2hours.(This is not a snack you can decide you wanna make and do it in minutes. You gotta decide 2hours prior)Use a spoon to scoop and place in preheated oil to fry. The first batch, after I removed my foil paper I didn't mix again before frying so it came out flat. The second batch, I mixed well before frying and it came out good. So take note of that tip. Use paper towels to drain oil out after frying and your puff puff is ready.

Tomatoes sauce made with red oil, beef, kpormor and lots of crayfish
Ingredients
1)Blended tomatoes and pepper
2)Onions
3)Red oil
4)Seasoning
5)Kpormor
6)Beef
7)Crayfish(pounded with some pepper cos I didn't want the crayfish smoothly blended)
8)Salt
PROCESS
Boil meat and kpormor till tender. Heat oil and add the tomatoes and pepper.fry till it dries down and you begin to see the oil coming to the top.add in the meat and kpormor,pepper and crayfish blended together and season with your spices. Add onions and salt. Fry for like 5minutes more stirring to prevent it burning at the bottom then add the meat stock. And more water if the stock is not enough. Cook for 5minutes more and you are done. Serve with rice.

When women lie about the cost of purchasing an item.
I'm so guilty of this tweet by @parenting . When I saw this tweet I was amazed at the poll . Men never understand all the things we get for kids or even ourselves. Things we need so badly may come across as unnecessary to them so what to we do? Sometimes even if my hubby hasn't expressed any opinion over an item I just know what he would say so when he sees it I either try to confuse him by saying its old but if he pays attention enough to know its not the truth, I half the price of the item. Lol. Sometimes to avoid that conversation about 'unnecessary expense' I don't allow him see it. This is not in anyway aimed at building a relationship based on mistrust. Because where the reasons for my actions come from is a place that is aimed at a peaceful,stressfree relationship and in no way related to deception because non of the spending is frivolous or unnecessary.
Bribing kids to get them to eat thier meals
If I had a dollar for every minute I scream stop picking at your food to my kids. Its either they're pushing away veggies or picking out items they want to eat out of the food. I will be like lily stop it(refering to her removing carrots from her food cos she doesn't like it) and her brother will look at me confused and ask what she did. Next time I will be correcting him. Its tiring. So what I do is; they love fish,meat and egg so its always in their food. I tell em, if u don't eat ,non of you will receive any of the bribe at the end of the meal. It works for as long as three spoonfuls eaten and then I have to remind them again. Its not easy but hey! If it gets the job done...
Cooking chicken in a microwave.
So I wanted to cook chicken but didn't want the nigerian conventional boiling on gas/kerosene stove so I decided to cook it in the microwave in a way of baking it. So i googled cooking chicken in a microvave and came across this article . It wasn't that helpful as I know I can barely defrost frozen foods within the time required to cook chicken there so I searched more and came across one which was more helpful. It had more tips to offer on my quest so I went ahead. i spiced my chicken, added water to the meat level and covered my microwaveable bowl. Please note never to use steel or metal bowls or pots in the microwave. I first microwaved at 350watts and for 20minutes but it wasn't cooked well enough. I microwaved for 10minutes more and it was just perfectly ok. So mission succeeded.

Vegetable soup cooked under 1500naira budget
Ingredients
1)Meat and shaki-#600
2)Pepper-#50
3)Water leaf-#150
4)Ugwu - #100
5)Red oil-#100
6)Crayfish-#50
7)Stockish-#240
8)Spices and salt-150
Process
Slice veggies and spice cook meat, stockfish and shaki till soft. In adding water to cook the meat,I kept adding it in cups. I allowed each cup of water to dry down, checked the meat and added again till my meat was soft enough then I allowed the water to dry up on the fire till it was almost(I didn't totally dry it up till it was totally dry) then I added red oil onions and pepper. Then I cooked that for like 5minutes and fistly added my water leaf to see the amount of moisture it will add in the soup then I added the ugwu and the rest of my ingredients-crayfish, spice to taste,salt and cook for 10minutes more and its ready. You can also add kpormo,blackfish to have more going in the soup if u like.
