okra soup with wheat

OKRA SOUP

1 cup grated okra 
2 tblspns crayfish 
1 1/2 cup meat stock, 
potash (kanwa-hausa, kanwu-Igbo, akanwu-Yoruba). 
Place meat stock on heat and bring to boil. 
Add crayfish, cook for 2mins then add the okra, potash and whisk to ensure okra doesn't form lumps. Leave the pot open and cook for 3mins on low heat.
 Serve with stew & wholewheat meal

moringa salad (zogale in hausa)

Ingredients: steamed moringa leaves, g/nut suya spice (kulikuli in hausa), tomatoes and avocado.
Method: mix freshly steamed moringa leaves with the g/nut suya spice, salt to taste & choice seasoning. Garnish with tomatoes and avocado.

SHREDDED BEEF CURRY WITH BASMATI RICE

Shredded beef curry with Basmati rice

Ingredients: 1/2kg shredded beef,2 cloves garlic, 2tblsp veg.oil,carrots,peas,1 chopped onion,1tsp curry,1 cup coconut milk,2tblsp tomato-pepper paste.

Method: stir fry beef with garlic & seasoning in oil until the meat is fried. Add tomato paste & keep frying for 2mins. Pour the coconut milk, curry & bring to boil. Add the carrots and peas, cook till the sauce is reduced. Stir in the onions, simmer for a minute before serving with steamed rice.

FISH PEPPER SOUP



Ingredients:
1kg catfish, cleaned,washed and cut
1 lemon
1 tablespoon vegetable oil
1tablespoon tomato-pepper paste
3 cloves garlic, peeled and chopped
1 fresh ginger, peeled and sliced
1 & 1/2 cup water
2 red chili peppers
1 leek, diced
2 bay leaves
3 seasoning cubes
Parsley, chopped
Salt
,


Method: 
*Marinate fish with lemon, pinch of salt and 1 seasoning cube for 15mins.
*In a non-stick pot, fry the tomato-pepper paste, garlic and fresh ginger in oil for 2mins. Add the water and bay leaves, bring to boil.
* Add the remaining seasoning cubes, leek, red chili peppers and then the fish.
* Lower the heat and allow to simmer for 5mins.
* Dish out and garnish with chopped parsley.

Serves 4

FRUITS IN YOGURT

Fruits in yogurt
>
> Ingredients: 
yogurt (sweetened or unsweetened depending on your choice), a cup each of diced plum, orange, pineapple, pawpaw & watermelon, coconut.

> Method: 
put the fruits together and add the yorghurt. Grate the coconut on top. Serve chilled.
 You also have the option of blending all together and serving chilled!

DANWAKE( a type of hausa dumpling)


Hello everyone, it's been a bit. 
 I recently made acquaintance  with a great innovative cook who is into healthy eating and I had to get the recipes on her delicacies because they all look so yum. Her name is Mrs Bilkisuwa. The recipe for this dish is below
Ingredients: 
danwake flour (a mix of beans,wheat flour,cassava flour, baobab & potash), veg. oil & pepper.

Method: 
mix the flour with water till it forms a somewhat thick but soft dough. Drop in boiling water and cook for 15mins. Strain and serve with veg oil,sprinkle of pepper, boiled eggs & cooked veggies

The image is not always what it seems!

 A lot of times we are blinded by what we see and make a lot of assumptions from what we see but the truth is; what we see is only the surface and like an ice berg,that is just 1%. The remaining 9% is immersed in water.
 People like to carry on facades of personas. I've come to learn that.
 Never be blinded by "perfect images" trust me, a lot of it are photo shopped.
 Your marriage,job,home,academics,business or whatever it is that concerns you is fine the way it is. If it's not,that's okay too.
 Have you ever had to say 'I'm  okay'even when your heart is hurting? Then think about it. How many people tell you they're more than fabulous which is just a mask behind their crumbling world.
 Comparison is a thief of joy I must say. Sometimes it's okay to have the trials because it can only make the testimony pronounced and celebrated. After the storm comes the testimony.
  Weeping may last the night but joy comes in the morning. Its a new year people. Let's enjoy the life we've been blessed with while we cook the one we dream about into reality. Have a lovely day. Cheers!
